Sugar free Pancakes

Simple and tasty sugar -free pancake recipe that will have your taste buds jumping for joy! This recipe can be prepared as vegan or gluten free. Makes approx 12

Ingredients

1 cup self raising flour ( or you can replace this with Buck wheat flour)

1 free range egg ( or use equivalent to one egg replacer)

250ml milk or milk alternative such as almond, soy or coconut milk)

1/3 cup honey ( or less depending on your sweet tooth, you can use stevia powder instead)

1 organic apple, peeled and grated

Organic butter or Nutlex for frying

Method – Combine all the ingredients, leave grated apple till last and then stir gently.

Melt some butter over medium – low heat.

Spoon in 1/3 batter. When surface starts to bubble up, flip and cool the other side.

Repeat till all the batter has been used up.

Topping – Berry Sauce spooned over pancakes add some greek plain yoghurt.

2 cups of frozen organic berries

1 tablespoon of rice malt syrup

1 teaspoon finely grated ginger

1/2 teaspoon grated organ zest

1 star anise, finely crushed

1/4 teaspoon ground cinnamon

Method

Combine all ingredients in a small saucepan and bring to boil. Lower heat and simmer for 5-10 mins. Serve warm or cool. Store in a clean glass jar in fridge for up to 2 weeks. Makes approx 500ml.
